This crispy chicken salad is a cinch to prepare. And unlike packaged chicken nuggets, you know exactly what is in the chicken - nothing but lightly crisped, white-meat chicken breasts.   Dubbed the "largest duathlon in the world," the second Team Ortho Minneapolis Duathlon is in the books! Downtown Minneapolis was the site for a breezy and slightly warm duathlon this morning. Almost 1,400 athletes finished the duathlon, 340 finished the "fun course" duathlon, 153 teams did the relay, 45 cyclists finished the time trial, and nearly 100 runners finished the 5K.
