Cheese stuffed mushrooms

Saint Paul News - Thu, 09/02/2010 - 01:22
These cheese stuffed mushrooms can be made with large portobello mushrooms for a sit-down appetizer or with the baby bellas for an appetizer that you just pop in your mouth. Creamy, cheesy, with a hint of spring onion tang, it's a simple addition to any buffet. Choose whole portobellos that are not cracked or broken. They are your vessel for all of that oozing cheese. The mascarpone can be substituted with cream cheese. You can use light cream cheese for that but I wouldn't use nonfat. It has an unfortunate way of separating. Cheese-Stuffed Mushroom Ingredients - Serves 4 4 large...

Simple Squash Sauté

Minneapolis News - Thu, 09/02/2010 - 01:05
Sometimes you need something simple. Chop a vegetable and throw it in a pan. This squash sauté fits the bill. Simple enough for a weekday, using seasonal yellow squash and zucchini, it get its sweetness from cherry tomatoes and onions. The onions need to cook for about ten minutes - but after that - you throw in the squash and you're done. The yellow, green and red colors brighten a dish. This is best with locally grown just picked squash and tomatoes. A definite summer dish. And summer's not over yet. Simple Squash Sauté Ingredients - serves 4 1-2 tablespoons extra...

Our survival depends on one another's well-being and the well-being of the good earth

Saint Paul News - Wed, 09/01/2010 - 23:33
Images of oil-drenched pelicans, vacant tar strewn beaches, and closed for business signs from the gulf oil spill this summer left no doubt that we human beings are not set apart from nature; like it or not, we are embedded within the ecological web of relationships along with all living creatures. In his 1952 novella, the Old Man and the Sea, Ernest Hemingway effectively portrayed both the predator-prey violence inherent in nature’s food chains as well as our universal interdependence. Far out in the Gulf Stream, Santiago, an old Cuban fisherman, considers his plight: “I do not...

The Gadsden Flag is not a "Tea Party Flag"

Minneapolis News - Wed, 09/01/2010 - 23:03
I graduated from Gallaudet University and purchased my first house in 2001. It was a 750 foot, 100 year old row house in the Trinidad Neighborhood in Washington DC. It was a pretty run down house but at 23 years old, I made it my own, I ended up painting the house forest green with black trim I also proudly displayed the Gadsden flag (purchased from Alamo Flag in Union Station) in my living room. While many in the Tea Party movement has adopted the Gadsden flag as a symbol of their movement. I was however, ashamed at the ignorance of my fellow man when I read an article about a man who&#39...

Minneapolis News - Wed, 09/01/2010 - 21:54
Labor Day. It’s a bittersweet holiday. Sure we get an extra day off from work and the weather’s still nice enough to enjoy a number of Minnesota summer activities like The Great Minnesota Get-Together (Mmm….anything on a stick!), ValleyFair, a weekend at the lake, or a day of swimming followed by an evening barbeque. But it also signifies the unofficial “end of summer”. And as we Minnesotans know all too well, the artic chill isn’t too far away. But rather than mourn the loss of our precious sunshine and outdoor rooftops and patios, let’s take...
